Dextran is a polysaccharide composed of glucose units. The only difference between dextrans and dextrins is in the structure. Dextrans are made up of a number of D-glucose molecules, having α(1 → 6), α(1 → 4), and α(1 → 3) glycosidic linkages (Figure 2.17).
